Boiled asparagus

Ingredients
1 bunch asparagus
Truffle oil (if you have, otherwise extra virgin olive oil, chilli oil, lemon oil or other flavoured oil)
1 lemon
Salt & black pepper

Method

1 Wash the asparagus and remove the ends of the stalks.

2 Place a pan of water on to boil with a sieve or colander inside

3 Once up to the boil, place the asparagus in the boiling water stalks first, propped against the side of the sieve so that the tips remain out of the water. You may need to do some further propping up with a slotted spoon or fish slice so that the asparagus doesn’t fall under the water 4 Boil for one minute exactly then remove from the pan and either eat immediately or plunge into ice water for eating later. (If you need to reheat the asparagus, a few seconds in hot water or under a grill will be more than sufficient)
