Slaw (makes enough for a crowd)
Ingredients
1 white cabbage (freshness is important for juicy coleslaw)
1/4 onion Jar of shop bought mayonnaise, or approx 200ml homemade
1/2 lemon
Salt and pepper
Method
1 Thinly slice the cabbage and quarter of an onion.
2 Place in a large bowl, add mayo, squeeze of lemon juice, salt and pepper and mix.
That's it. Feel free to add grated carrot, parmesan (seriously, try it, you won't be sorry), chillis, chopped herbs (mint, parsley, tarragon, chives, coriander all good), replace lemon juice with lime or orange, or omit juice, chopped gherkins, or whatever crunchy stuff you fancy.
It's best made and eaten on the day as the veg will soften over time but leftovers can be kept in the fridge for a couple of days.
